Gluten free and low carb baking
Many people nowadays want to replace wheat flour. Regular wheat flour contains gluten and has about 70 grams of carbohydrates per 100 grams. People who eat gluten-free, grain-free or low-carb choose to avoid wheat products. Fortunately, there are enough flour substitutes on the market today to continue to enjoy delicious sweet and savory dishes! In this blog we explain how you can replace wheat flour with Steviala flour substitutes.
Steviala flour substitutes
Steviala offers various flours that you can use to replace wheat flour. Let's start with the Steviala almond flour. This flour contains 100% almonds and contains no additives. Almond flour is simply ground almonds. This makes almond flour healthy and an excellent substitute for regular wheat flour. Almond flour is also low in carbohydrates. But be careful! The quality and macros of almond flour can vary quite a bit between brands, with sometimes peaks of up to 32 grams of carbohydrates per 100 grams! The Steviala almond flour contains only 5.77 grams of carbohydrates and is therefore extremely suitable for preparing low-carb dishes. How about these delicious sugar-free chocolate chip cookies? But you can also bake savory recipes with it, such as these low-carb sausage rolls!
Besides almond flour, Steviala also offers coconut flour. With this, you can also replace part of wheat flour in a recipe. Steviala coconut flour is made from 100% coconuts. Coconut flour is also simply ground coconut. So it is a pure product. Just like almond flour, there is also a lot of difference between coconut flour from different brands. We can proudly say that the Steviala coconut flour contains only 8.9 grams of carbohydrates and therefore fits perfectly in a low-carb diet. For example, you can use the Steviala coconut flour in these delicious sugar-free coconut lemon waffles or these delicious low-carb coconut pancakes.
Pay attention to the proportions
It is a frequently asked question: can I replace almond flour or coconut flour 1 on 1 with wheat flour? Unfortunately, that's not so easy, but we'll explain the best way to proceed!
Almond flour
Does a recipe call for 100 grams of (self-raising) flour? Replace this with 150 grams of almond flour and one egg. Do you want to replace wheat flour? Then sieve the almond flour so that it has a finer texture.
Coconut flour
However, coconut flour is a different story. This flour does not have the same properties as ordinary wheat flour. Coconut flour absorbs a lot of moisture in recipes. So you only need very little of it. If you use too much coconut flour, there is a chance that your recipe will become too dry. Keep as a guide that you can replace wheat flour with 1/4 part coconut flour. So does a recipe call for 100 grams of wheat flour? Then use 25 grams of coconut flour and then supplement this with a different type of flour. Add 1 extra egg to prevent dry baking. When binding meat or sauce, you can replace coconut flour 1 on 1 with regular wheat flour.
