Low carb and sugar free yoghurt pudding

  • 165 grams Greek yoghurt 10%
  • 3 eggs
  • 12 grams baking powder
  • 25 grams Steviala almond flour
  • 40 gram Steviala Ery-Bronze
  • 1 teaspoon vanilla extract
  • 35 grams raspberries
  • 30 gram blackberries

Sugar free topping (optional)

  • fruits of your choice
  • Greek yoghurt 10%

Preparation

Baking low carb and sugar free yoghurt pudding

First, preheat the oven to 150 degrees celsius. Then you weigh and prepare all the ingredients. Add the yoghurt, eggs, baking powder, almond flour, vanilla extract and Ery-Bronze to a mixing bowl. Mix this until it becomes a smooth batter. Then you add the raspberries and blackberries to the mixture. Pour this mixture into an oven dish (20 x 20cm) and bake this for 30 to 40 minutes in the oven. Turn off the oven and let the yoghurt pudding cool down in the oven. During the cooling down process, the yoghurt pudding becomes stiffer.

Sugar free topping

You can serve the low carb and sugar free yoghurt pudding with different toppings. A delicious option is to put a tablespoon of the baked yoghurt pudding in a bowl. Add some more tablespoons of Greek (vanilla) yoghurt to the bowl and some more fruits. Enjoy!
