Thanks to Steviala Frost sugar-free powdered sugar made with erythritol and steviol glycosides from Stevia, this festive dessert still gets that classic sweetness and elegant finish, completely guilt-free.

In this unique apple strudel, we replace the standard walnuts and currants with a richer, more colorful combination. Think crunchy pistachios, sparkling cranberries, and vibrant freeze-dried raspberry pieces. Together, they create a flavorful and luxurious filling that makes every slice special. This not only makes the crisp apples wonderfully sweet and juicy, but also gives them a surprisingly festive crunch.

Once the strudel comes out of the oven golden brown and crispy, dust it with a soft snow of Steviala Frost for that perfect wintery effect. The result? Ingredients

  • 10 sheets fresh puff pastry (freezer)
  • 300 g apples (Goudreinet/Boskoop)
  • 50 g cranberries
  • Pinch of gingerbread spices
  • 50 g pistachios
  • 5 g freeze-dried raspberries
  • 30 g Steviala Frost
  • 1 tbsp cornstarch
  • Zest and juice of 1/2 lemon
  • 3 tbsp slivered almonds
  • 15 g butter

Preparation

Making Sugar-Free Apple Strudel

Preheat the conventional oven to 180 degrees Celsius (350 degrees Fahrenheit). Then remove the puff pastry from the freezer and let it thaw.

Meanwhile, dice the apples and mix them with the herbs, cornstarch, Frost, cranberries, pecans, and the zest and juice of ½ lemon.

Lay 9 pieces of puff pastry on a piece of parchment paper, overlapping each other to form a larger square (3 x 3).

Lay the apple filling from the bottom left to the top right. First, fold the bottom left and top right corners over the apple filling. Then, take the top left corner and lay it over the apples, trying to seal it as tightly as possible. Then do the same with the bottom right corner. Cut strips from the 10th sheet of puff pastry with a pizza cutter and place them on the sugar-free apple strudel as decoration.

Melt the butter and brush it over the apple strudel. Finally, sprinkle with the almond shavings.

Place in the oven for 45-55 minutes and then let cool completely.
