
Sugarfree mini passionfruit cheesecakes
We certainly don't sit still! Have you tried the new Steviala Pure Passion sugarfree passion fruit sauce? Delicious in a bowl with yoghurt or cottage cheese, but you can also bake with it! How about these sugarfree mini passionfruit cheesecakes?
Ingredients
Low carb granola crust
- 50 grams granola
- 30 grams butter (at room temperature)
- 15 ml Steviala Heavenly Dark
Sugarfree cheesecake layer
- 300 grams quark
- 50 ml whipping cream
- 50 grams Steviala Frost
- 3 tablespoons Steviala Pure Passion
- 5 ml vanilla extract
- 3 gelatin sheets
Sugarfree passionfruit layer
- juice of 4 passion fruits
- 3 tablespoons Steviala Pure Passion
- 50 ml whipping cream
- 1,5 gelatin sheets
Baking supplies
- mixing bowl
- food processor
- electric hand mixer
- big cupcake tin or dessert rings
- oven
Preparation
Making a sugarfree crust
First, start by preheating the oven to 180 degrees. Then, grind your favourite granola in a food processor and then add the butter and Heavenly Dark. Mix this into a smooth dough and then divide the bottom into a cupcake tin. Hereafter, bake the bottom in the oven for 12 minutes and then let it cool completely.

Then get started with the filling. Start with mixing the cottage cheese, whipped cream, Steviala Frost, Steviala Pure Passion and vanilla extract together. Meanwhile, place the gelatin sheets in a bowl of cold water. Melt these gelatin sheets in a pan with a few tablespoons of the quark mixture. Finally, slowly add this to the rest of the quark layer and mix well. Then pour the passion fruit quark layer over the now cooled bottom and put the cheesecakes in the fridge for at least 30 minutes before adding the next layer.
Making the sugarfree passionfruit layer
Finally, get started with the sugarfree passion fruit layer. Juice 4 passion fruits and collect the juice. Then add the Steviala Pure Passion and whipped cream and stir well. Meanwhile, place the gelatin sheet in a bowl of cold water. Let this gelatin sheet melt in a few tablespoons of the passion fruit mixture. Add this to the rest of the passion fruit layer and stir well. Finally, pour this over the quark layer and put the sugarfree mini passion fruit cheesecakes in the fridge for at least 3 hours. Then you can enjoy these sugarfree mini passion fruit cheesecakes!
