High protein crème brûlée with orange and strawberry is a surprising combination and a delicious variant of the low carb Crème Brûlée that is already on our weblog. Crème Brûlée, everyone knows it. It's a custard dessert topped with a good layer of caramelized sugar. In other words, crème brûlée is a dessert that is packed with sugar, but is super tasty. To make a good crème brûlée you need a small gas burner. This makes a delicious crispy layer. It all sounds great, but even better if I tell you that this high protein crème brûlée is just as tasty! This summer high protein crème brûlée with orange and strawberry of course!

Without refined sugars

As the name suggests, this summery and high protein crème brûlée contains a lot of protein, but fewer calories and carbohydrates. Which version would you choose now? This recipe is even better than the real one, because it is of course also free of refined sugars. But how? Crème brûlée without a crispy sugar layer is no longer a crème brûlée? We owe that to our delicious brown sugar substitute Steviala Ery-Bronze. That, in combination with the summery touch of orange & strawberry, makes this summery high protein crème brûlée truly thumbs and fingers licking. Of course, this crème brûlée still contains naturally occurring sugars from fruit and dairy, so it is not 100% sugar-free. Nevertheless, it is wonderful to enjoy!

Ingredients

High protein crème brûlée

  • 80 grams mascarpone
  • 180 grams of low fat quark
  • 2 eggs
  • juice and zest of 1 small orange
  • 1 tablespoon Steviala Kristal Sweet
  • a small squeeze of Steviala Orange Splash drops
  • strawberry for the topping
  • 15 grams Steviala Ery-Bronze

Preparation

Making the high protein crème brûlée

Preheat the oven to 160 degrees. Then grate the zest of the orange and squeeze. Separate the egg yolk from the egg white and put the egg yolk in a bowl. You do not use the egg white, you can use this for an omelette, for example. Add the mascarpone, quark, Kristal Sweet, Steviala Orange Splash drops and the juice and grated zest of the orange. Mix well and pour into two baking dishes.

Place the two small oven dishes in a large oven dish and fill the large oven dish completely with water so that the small dishes are three quarters under water. Place the dish in the oven for 20-30 minutes. Remove the ramekins from the oven and let cool. When the crème brûlée has cooled completely, sprinkle the Ery-Bronze over it and then make a crispy layer with the burner. Finally, sprinkle some strawberry pieces on top for decoration.
