Treat your birthday guest with low carb chocolate cake with meringue. Unfortunately, normal chocolate cake has a lot of carbs. But lucky you! We made a low carb chocolate tart with meringue that is sugar free. This treat is sweetened with Steviala Ery-Pure, a healthy addition to sweet dishes like this cake. This sugar substitute has the same structure as granulated sugar but does not have an effect on your blood sugar levels. This way, this cake is also suitable for people with diabetes.

Ingrediënten

  • 3 eggs
  • 70 grams Steviala Ery-Pure
  • 40 ml milk, almond milk or coconut milk
  • 120 grams melted butter
  • 150 grams almond flour
  • 15 grams baking powder
  • 20 grams unsweetened cacao powder
  • 60 grams chopped walnuts
  • half teaspoon of vanilla extract
  • pinch of salt

Meringue

  • 2 egg whites
  • 50 grams Steviala Kristal Sweet
  • half teaspoon of vanilla extract
  • pinch of salt

Preparation method

Baking the low carb chocolate cake with meringue

First, preheat the hot air oven to 180 degrees celsius. Prepare all ingredients for the chocolate cake. First, melt the butter in a saucepan or in the microwave. Beat the eggs together with the melted butter, milk and vanilla extract. Then you add the almond flour, cacao powder, baking powder, Steviala Ery-Pure and a pinch of salt to the eggs.

At last, you add 60 grams of the chopped walnuts to the mixture. It is now ready to be baked. Pour the batter in a lined springform pan of 24 cm. Place the springform pan in the oven and bake the cake for 10 minutes. Take the springform pan out of the oven after 10 minutes and put it aside. In a clean mixing bowl, you add the egg whites, Kristal Sweet, half teaspoon of vanilla extract and a pinch of salt. Whip this until it becomes stiff. Divide the egg whites on top of the chocolate cake and place the springform pan in the oven for 35 minutes. Let the cake cool down completely. Serve the sugar free and low carb chocolate cake with some extra unsweetened cacao powder.
