Angelique used Steviala Lemon Meringue Pie drops to give this cake a deliciously sweet taste. In addition, she also used Steviala low carb almond flour, Steviala Kristal Sweet Vanilla and our Dark Chocolate Chips. What a treat!

Ingredients

Low carb lemon meringue cake

  • 4 eggs
  • 200 grams Steviala almond flour
  • 100 grams cream cheese
  • 100 grams butter
  • 2 tablespoons Steviala Kristal Sweet Vanilla
  • 4 squeezes Steviala Lemon Meringue Pie drops
  • 2 tablespoons Steviala Dark Chocolate Chips
  • 50 ml unsweetened almond milk
  • 2 teaspoons baking powder

Sugarfree frosting

  • Steviala Frost + a few tablespoons of water
  • a few Steviala Dark Chocolate Melties
  • 2 tablespoons Steviala Rainbow Sprinkles

Preparation

Making sugarfree lemon meringue cake

First, preheat the oven to 180 degrees. Next, put the eggs in a bowl and then mix until fluffy with an electric hand mixer. Then add the cream cheese and melted butter and mix well again. Next, add the other ingredients one by one. Then mix this into an even batter. Finally, add the Steviala Dark Chocolate Chips and spoon this into the batter.

Next, grease a baking pan and pour in the batter. Place the baking pan in the oven for about 1 hour. Use a skewer to check whether the cake is done. Then let the cake cool completely.

Making sugarfree icing

Mix some Steviala Frost with water to make the sugarfree icing. Then spread this over the now-cooled cake. Finally, melt a handful of Steviala Dark Chocolate Melties in a small bowl in the microwave. Then spread this over the cake. Finally, spread some Steviala Rainbow Sprinkles over the cake. Let this harden in the refrigerator before serving the cake.
