Ingredients
Low carb cream puffs
- 4 egg whites
- 5 grams baking powder
- 30 grams Steviala Frost
- pinch of salt
- 3 grams vanilla extract
Sugarfree whipped cream filling
- 250 ml (plant-based) whipped cream
- 5 grams vanilla extract
- 50 grams Steviala Frost Vanilla
- 1.5 gelatin sheet
Sugarfree chocolate topping
- 75 grams of Steviala Dark Chocolate Melties
Baking supplies

Preparation
Making low carb carb cream puffs batter
Start by making the low carb carb cream puffs. Preheat the oven to 185 degrees Celsius. Separate the egg whites from the egg yolks of 4 eggs. Make sure no egg yolk gets into the egg whites. Grease a bowl where you'll mix the egg whites. Beat the egg whites until stiff peaks form. Then add the baking powder, Steviala Frost, a pinch of salt, and the vanilla extract. Continue mixing the egg whites for about 7 to 10 minutes. All the ingredients should be well incorporated.
Then line two baking sheets with parchment paper. Using two spoons, shape 15 small balls of batter on the baking sheets. Place the baking sheets in the oven for 15 to 20 minutes. Meanwhile, stay close because they can quickly brown. Then reduce the oven temperature to 150 degrees and bake for another 15 minutes. Do not open the oven doors, or the cream puffs will collapse. At last, let the low carb carb cream puffscool completely.
Making the sugarfree whipped cream filling
Meanwhile, prepare the sugarfree whipped cream filling. Whip the whipped cream together with the vanilla extract and Steviala Frost until stiff peaks form. Then soak the gelatin sheet in cold water. Heat 1 tablespoon of the whipped cream in a small saucepan and melt the gelatin sheet in it. Then add this mixture to the whipped cream and fold it in. Transfer the whipped cream to an icing bag with a small pointed tip and let it set in the refrigerator for a while.
Furthermore, fill the low carb carb cream puffs by inserting the pointed tip of the icing bag into the bottom of each cream puff. At last, place the cream puffs in the refrigerator for at least 30 minutes to allow the whipped cream to set further.
Sugarfree chocolate topping
Furthermore, melt the Steviala Dark Chocolate Melties in a bowl in the microwave. Stir every 10 seconds to prevent the chocolate from burning. Dip the top of the low carb carb cream puffs into the melted chocolate or create a beautiful chocolate swirl over the cream puffs with the melted chocolate. The choice is yours! Place the low carb carb cream puffs back in the refrigerator until the chocolate hardens.
