You can find plenty of delicious recipes on Instagram. That way you keep inspiring each other. This recipe is inspired by the low-carb lemon cake from Biancaslowcarbfood, but slightly different! Namely a low-carb gingerbread cake. The delicious scents and flavours of gingerbread, with a soft creamy cake. By using the sugar substitute Steviala Kristal Sweet, the gingerbread cake is also sugar-free! The nutritional values are great too, with only 1.9 grams of carbohydrates per slice of gingerbread cake! Try to stay away from this!
Ingredients
Low carb gingerbread cake
- 115 grams butter
- 175 gram mascarpone cheese
- 85 grams Steviala Kristal Sweet
- 4 eggs
- 175 grams Steviala almond flour
- 8 grams baking powder
- pinch of salt
- 1 tablespoon gingerbread spices
- 1 tablespoon cacao powder
Sugar free gingbread cake topping
- Steviala Frost

Preparation
Baking low carb gingerbread cake
Preheat the oven to 175 degrees. Then whip the butter with the mascarpone and Kristal Sweet until creamy. Next, add the eggs 1 by 1 and beat until creamy. You then, add the rest of the ingredients. Continue beating until a homogeneous batter is formed.
Then spoon the batter into a baking tin (as desired) and bake the low-carb gingerbread cake for 50 minutes in the oven.
Then let the gingerbread cake cool completely outside the oven. You then sprinkle some Steviala Frost on top if desired. Finally, cover the gingerbread cake with aluminum foil and store in the refrigerator.
