Sugarfree lowcarb wagon Wheels is a delicacy that people from Australia, Ireland, Canada, and the Dominican Republic are particularly fond of. Wagon Wheels are made up of a layer of cookie, jam, and marshmallow. You can make a healthy treat with almond flour and Steviala Ery-Bronze. Even the jam and marshmallows are sugarfree! These marshmallows can be ordered from the Afvallen met Bregje webshop. You can make approximately 16 pieces of this sugarfree treat with around 5 grams of carbs per piece.

Ingredients

Sugarfree and lowcarb Wagon Wheels 

  • 95 grams butter
  • 25 grams Steviala Ery-Bronze
  • 10 grams Steviala coconut flour
  • 80 grams Steviala almond flour
  • 9 grams baking powder
  • 5 strawberries
  • Sugarfree strawberry jam
  • Sugarfree and glutenfree marshmallows
  • 90 grams Steviala Milk or Dark Chocolate Melties

Preparation

Making sugarfree lowcarb Wagon Wheels

First, start by preheating the oven to 175°C to make these sugarfree and lowcarb wagon wheels. Then, in a mixing bowl, mix 95 grams of butter with Steviala Ery-Bronze until light and fluffy. Add the almond flour, coconut flour, and baking powder to the butter mixture. Next, mix the ingredients together until a homogeneous mixture is formed. You then spread the mixture evenly over a 20 x 20 cm square cake baking pan. Next, bake the cake in the oven for about 30 minutes. Meanwhile, check the top after 20 minutes to make sure it is not too brown. If it is, cover it with aluminum foil to prevent it from getting even browner.

After this, remove the sugarfree lowcarb Wagon Wheels from the oven after 30 minutes. Allow it to cool before spreading a layer of jam on top. You then place a sliced strawberry on top of the jam. Melt the marshmallows using the au-bain-Marie method. You then keep stirring until it is completely melted (note: it can be sticky!). Using a icing bag, add the melted marshmallow on top of the strawberry jam. Then put it back in the fridge for at least 15 minutes.

Then melt the chocolate in a saucepan. You then pour the chocolate over the Wagon Wheels for an extra delicious layer. In addition, do not serve the sugarfree lowcarb Wagon Wheels right away. Instead, put them in the refrigerator for at least 1 hour to cool.
