Ingredients

Low-Carb Lemon Cake

  • 115 g softened butter
  • 170 g cream cheese (Philadelphia)
  • 100 g Steviala Crystal Sweet Vanilla
  • 4 large eggs
  • 1.5 tsp lemon juice (more to taste)
  • 190 g Steviala almond flour
  • 1.5 tsp (cream of tartar) baking powder
  • 1/4 tsp (Himalayan) salt
  • 1/2 tsp grated lemon zest

Sugar-free topping

  • 250 grams cream cheese
  • 20 grams butter
  • 50 grams Steviala Frost

Preparation

Making the low-carb lemon cake

Preheat the oven to 175 degrees. Next, ensure everything is at room temperature. Then, mix the dry ingredients together.

Next, mix the butter, cream cheese, and Steviala Kristal Sweet Vanilla together. Now, add the eggs one by one and beat until light and fluffy. Next, add the lemon juice. Taste the batter to see if you can taste enough lemon. Add more to your liking. Then, briefly mix in the dry ingredients until everything is well combined.

Next, line a cake tin (22cm) with baking paper and spread the batter inside. Bake for 55 minutes. After about 45 minutes, check if the cake is getting too dark. If necessary, cover with aluminum foil and finish baking the cake. Let the low-carb lemon cake cool completely outside the oven.

Making the sugar-free topping

Once the low-carb lemon cake has cooled, proceed with the topping. Beat the cream cheese together with the butter until creamy. Next, add the Frost and whisk together until creamy. Taste to see if you find the topping sweet enough; otherwise, add some more Frost. Then, spoon the topping into a piping bag and place it in the refrigerator for 15 minutes. Afterward, spread the topping over the lemon cake.
