Strawberry jam without sugar

  • 200 grams fresh strawberries
  • 30 grams Steviala Kristal Sweet
  • 30 grams Supreme Strawberry
  • 50 ml water

Strawberry tiramisu cake

  • 30 lady fingers or these home-made lady fingers biscuits
  • 300 grams mascarpone
  • 100 ml whipping cream
  • 100 grams Steviala Frost Vanilla
  • 1,5 gelatin sheets
  • Supreme Strawberry to taste
  • extra strawberry for the topping

Making strawberry jam without sugar

First, start by making the sugarfree strawberry jam. First, cut the strawberries into cubes. Then add it to a sauce pan. Also add the Steviala Kristal Sweet, Supreme Strawberry and the water. You then let it simmer until the jam has thickened. Then puree this into a smooth strawberry sauce. Let this cool down before you continue with this strawberry tiramisu cake.

Making sugarfree strawberry tiramisu mascarpone filling

Meanwhile, get started with the mascarpone filling for this strawberry tiramisu cake. Make sure the whipped cream and mascarpone are the same temperature. This allows it to mix better. First, whip the whipped cream until stiff. Then add the mascarpone and Steviala Frost Vanilla in parts. Finally, add the Supreme Strawberry. Mix this with an electric hand mixer or food processor until smooth. Meanwhile, soak the gelatin sheets in a bowl of cold water.

Then melt the gelatin sheets with 3 tablespoons of the mascarpone filling in a saucepan. You then let it cool down for a while. Then pour this slowly and while mixing with the rest of the mascarpone filling. Then it's time to make the strawberry tiramisu cake!

Strawberry tiramisu cake without sugar

Line a springform pan with acetate foil. Then cut the ladyfinger biscuits all to the same length. You then place them along the edge of the springform pan. Also, put 4 ladyfinger cookies on the bottom. Fill the holes with the left over ladyfinger biscuits.

Then fill a piping bag with the mascarpone filling. Pipe this over the ladyfinger cookies on the bottom. Spread this further with a spatula. Then dip the rest of the ladyfinger cookies in the strawberry jam and place them on top of the first mascarpone layer. Spread a few tablespoons of the strawberry jam on top as well. Repeat these layers until the springform is completely filled. Make sure you have some of the mascarpone filling left over for decoration. Make small tufts with this on top of the strawberry tiramisu cake and place a few more strawberries on top.

Then let the strawberry tiramisu cake without sugar set in the fridge for at least 2 hours. Bon appetito!
