You can make delicious low carb tiramisu cupcakes with this recipe. We used Steviala sugar substitutes and Steviala low carb almond flour to make a sugar free and low carb recipe. Enjoy this low carb and sugar free treat. This recipe makes 6 low carb tiramisu cupcakes. Each cupcake has 2.2 grams of carbs and 7 grams of protein. Such great macro's! Curious about the recipe? Ingredients

Low carb tiramisu cupcakes

  • 85 grams Steviala almond flour
  • 40 ml whipping cream
  • 45 grams butter
  • 45 grams Steviala Kristal Sweet Vanille
  • 4 grams baking powder
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup of espresso

Sugar free glaze layer

  • 45 grams mascarpone cheese
  • 25 grams Steviala Frost
  • 45 ml whipping cream
  • 1 teaspoon espresso

Baking supplies

  • oven
  • mixing bowl
  • electric hand mixer
  • 6 cupcake thins
  • optional: Tefal Cake Factory

Preparation

Baking the low carb tiramisu cupcakes

First, preheat the hot air oven to 180 degrees celsius. Then you mix all the ingredients, apart from the espresso, until it becomes a creamy consistency. Add the batter into 6 cupcake thins. Then bake the cupcakes for 30 minutes, or use the Tefal Cake Factory and let them cool down outside of the oven. Hereafter you make a cup of espresso. With a skewer, you poke 4 to 5 holes in the low carb tiramisu cupcakes. Pour 2 to 3 teaspoons of espresso into the holes in the cupcakes. This way, the cupcake stays moist and gets a lovely espresso taste. Let them cool down again and continue with the sugar free glaze layer.

Making the sugar free glaze layer

Add all the ingredients to a mixing bowl and whip this until it becomes a creamy consistency. Spoon the sugar free glaze into a piping bag with a serrated tip. Take the cupcakes and pipe the glaze layer on the cupcakes. Then sift a little bit of cacao powder over each cupcake. Place the low carb tiramisu cupcakes in the fridge for at least 1 hour.
