Ingredients

Low carb yoghurt lemon cake

  • 3 eggs
  • 275 grams Greek yoghurt
  • 50 grams Steviala Kristal Sweet
  • 2 tablespoons lemon juice
  • lemon zest of 1/2 lemon
  • 8 grams baking powder
  • 125 grams Steviala low carb almond flour
  • 10 Steviala lemon drops
  • pinch of salt

Sugar free glaze

  • 30 grams Greek yoghurt
  • 30 grams Steviala Frost
  • 2 tablespoons of water
  • 10 Steviala lemon drops or Steviala orange splash drops

Baking supplies

  • electric hand mixer or whisk
  • cake thin of 25 cm (or 2 à 3 small turban cake thins)

Preparation

Making a low carb yoghurt lemon cake

First, preheat the hot air oven to 160 degrees. Then add all the ingredients for the cake to a mixing bowl. Next, mix the batter for 2 minutes until creamy. Then pour the batter into a greased cake tin. Bake the low-carbohydrate yoghurt lemon cake in the oven for 30-40 minutes. Then remove the cake from the oven when it is a nice golden brown colour. Let the lemon cake cool completely outside the oven. Then move on to the sugar-free frosting.

Sugar free glaze

You don't need much for the sugar-free glaze of the low carb yoghurt lemon cake. First, mix the ingredients for the glaze layer well with a spoon. Is your yoghurt icing too thick? Then add a little Greek yoghurt. Is your icing too thin? Then add more Steviala Frost to it. Then cover the top of your low carb yoghurt lemon cake with the glaze. Finally, let it set in the fridge.
