Bounties don't always have to contain a lot of sugars and carbohydrates. This recipe for lowcarb and sugarfree bounty with Steviala coconut flour proves just that. In a lowcarb or carb-restricted diet, sugars are completely forbidden, and that's why this bounty is sweetened with Steviala sweetener from stevia drops bourbon-vanilla. Steviala stevia drops bourbon-vanilla is a sugar substitute based on steviolglycosides. Additionally, this sugar substitute has an additional advantage: the stevia drops contain no carbohydrates, making them suitable for people who need to be mindful of their diet, such as those with diabetes. This low carb bounty contains only 2.02 grams of carbs per piece. I made 20 of these sugarfree bounties using a magnetic bonbon mold, which you can order, among other places, from Oldenhof Kookwinkel. Super convenient for getting the low carb bounties out of the molds.

Ingredients

Lowcarb and sugarfree Bounty

  • 125 ml heavy cream
  • 175 grams shredded coconut
  • 10 grams low carb Steviala coconut flour
  • 150 grams Steviala Dark Chocolate Melties
  • 20 Steviala sweetener from stevia drops bourbon-vanilla or to taste

Preparation

Making lowcarb and sugarfree bounty

Mix the shredded coconut with the coconut flour. Then, add the heavy cream and Steviala stevia drops bourbon-vanilla, and stir well. Taste to ensure it's sweet enough. If not, add a few more Steviala drops. Fill the 20 bonbon molds with the coconut mixture and wrap them with plastic wrap. Place them in the freezer for at least 1 hour.

Melt 100 grams of Steviala dark chocolate using a double boiler. Once melted, remove the bowl from the heat and add the remaining 50 grams of sugarfree chocolate. Stir until everything is melted again. Take a plate and cover it with baking paper. Remove the coconut filling from the freezer and the molds. Then, place each filling in the chocolate, using a fork to cover the entire filling with chocolate. Place the bounty on the prepared plate. Repeat until all coconut fillings are covered with the sugarfree chocolate, and you have beautiful, but especially delicious, sugarfree bounties.

Store the sugarfree and lowcarb bounties in the refrigerator. Enjoy!

    Het is eenvoudig om te maken,alleen een beetje geduld met het een tijdje in de vriezer te zetten, maar ook dat is geen probleem.
    Ik had het precies volgens het recept gedaan, het zijn net echte mini bounty¨s. De smaak van het kokos was goed,maar een volgende keer ga ik of het meer zoet maken ,en gebruik ik melkchocolade om ze door heen te halen. Maar dat is natuurlijk persoonlijk, en als je helemaal geen suiker mag of wilt is de pure 85% beter.
