However, in this recipe for sugar free shortbread cookies, we're giving these traditional shortbread cookies a twist, of course! We're making them sugar free and low in carbohydrates. Moreover, with this delightful recipe, you can experiment to your heart's content! What can you do then? For example, vary the spices and Steviala drops to taste! Thank you in advance, Naomi!

Ingredients

Sugar free shortbread cookies

  • 100 grams Steviala almond flour
  • 100 grams plain flour, optionally replaceable with 150 grams almond flour with additional binding agent (1 egg)
  • 70 grams light margarine
  • 1 egg
  • 2 teaspoons gingerbread spices
  • 1 teaspoon Steviala caramel drops
  • 4 tablespoons Steviala Kristal Sweet Vanilla
  • optionally, Steviala Frost, natural food coloring, water, and milk for decoration

Baking supplies

  • 12 cookie cutters
  • cling film
  • rolling pin
  • deep bowl
  • baking paper
  • cutting board
  • optionally, a decorating spoon to decorate your cookie

Preparation

Making sugar free shortbread cookies

First, preheat the oven to 180 degrees Celsius. Meanwhile, take the margarine out of the refrigerator and let it come to room temperature. Then, take all the ingredients and knead them with your hands in a bowl until they form a crumbly dough. Sprinkle some flour on your cutting board or table and place the dough clumps on it. Next, knead the mixture with your hands until it forms a firm dough. Shape it into a nice ball. Then, wrap this ball in cling film and let it rest for 10 minutes.

Afterward, sprinkle your cutting board or table with flour again and roll out the dough ball. It's best to use a rolling pin for this. Roll out the dough to a thickness of about half a centimeter, then cut out your shapes. Next, place baking paper on a baking tray and place the cookie shapes on it. Put the tray in the oven for 20 minutes. After that, you can enjoy these delicious sugar free shortbread cookies!

Tips for decorating sugar free shortbread cookies

Mix Steviala Frost with some water and/or milk for a sugar free glaze. Then, decorate the cookies with the decorating spoon and the sugar free glaze mixture. Wait for the sugarfree glaze to harden. Want a colored sugar free glaze layer? Add some natural food coloring to the previous tip! Melt sugarfree chocolate and use your decorating spoon again for decoration. It's a lot of fun to do this activity together with the kids!
