- 500 grams ripe bananas
- 6 eggs
- 2 teaspoons gingerbread spices
- 300 grams oatmeal or oatmeal flour
- 2 teaspoons baking powder
- 1 banana (for decoration)
- 40 grams Steviala Kristal Sweet Vanilla
- 40 grams nuts and seeds of your choice (e.g. walnuts, pumpkin seeds and sunflower seeds)

Preparation

First start by preheating the oven to 180 degrees. Then grease a 25 cm cake tin with oil and line the bottom and two sides with parchment paper.
Then grab a blender or food processor (with blades). You then add the eggs, 500 grams banana, cinnamon, Steviala Kristal Sweet Vanilla and the salt. Next, blend this until you get a smooth mass. Then add the oatmeal and baking powder and mix again. The batter does not have to be completely smooth. You may still see small pieces of the oatmeal flakes. Finally, stir the nuts and seeds through the batter.
Then scoop the batter into the bread pan. You then cut a banana in half and place it on top of the batter. Then place the bread tin in the oven for 45 to 60 minutes and bake until done.
