Sugarfree carb reduced banana bread, you want this! Iris from @zoetjes_aan baked this delicious banana bread with Steviala's products. The banana bread is made on the basis of ripe banana, eggs and oatmeal (flour). Iris further flavored the banana bread with cookie and gingerbread spices and Steviala Kristal Sweet Vanilla for a deliciously sweet taste with a hint of vanilla. Don't have a large cake tin or bread tin? Then use a regular cake tin. You have to halve the ingredients.

  • 500 grams ripe bananas
  • 6 eggs
  • 2 teaspoons gingerbread spices
  • 300 grams oatmeal or oatmeal flour
  • 2 teaspoons baking powder
  • 1 banana (for decoration)
  • 40 grams Steviala Kristal Sweet Vanilla
  • 40 grams nuts and seeds of your choice (e.g. walnuts, pumpkin seeds and sunflower seeds)
  • pinch of salt

Preparation

Making sugarfree carb reduced banana bread

First start by preheating the oven to 180 degrees. Then grease a 25 cm cake tin with oil and line the bottom and two sides with parchment paper.

Then grab a blender or food processor (with blades). You then add the eggs, 500 grams banana, cinnamon, Steviala Kristal Sweet Vanilla and the salt. Next, blend this until you get a smooth mass. Then add the oatmeal and baking powder and mix again. The batter does not have to be completely smooth. You may still see small pieces of the oatmeal flakes. Finally, stir the nuts and seeds through the batter.

Then scoop the batter into the bread pan. You then cut a banana in half and place it on top of the batter. Then place the bread tin in the oven for 45 to 60 minutes and bake until done. Do you want to check whether the banana cake with oatmeal is done? You can check this by sticking a skewer in the cake after 45 minutes. Is there no batter on the skewer when you take it out? Then the cake is ready. Is there still some batter on the skewer? Then you can bake the banana bread a little longer. The riper the bananas, the smoother the sugarfree banana bread will be.
