Ingredients
Sugar-Free and Low-Carb Madeleines
- 2 eggs
- 100 grams Steviala Kristal Sweet
- 100 grams almond flour
- 50 grams coconut flour
- 100 grams butter, melted
- 1 tsp vanilla extract
- 1/2 tsp baking powder
- Pinch of salt
Sugarfree Glaze
- 100 grams Steviala White Chocolate
- 1–2 tbsp butter
- Green food coloring

Preparation
How to Make Sugarfree and Low Carb Madeleines
Preheat your oven to 180°C (356°F) and grease a madeleine mold or use a silicone mold. In a large bowl, whisk the eggs and Steviala Kristal Sweet until light and fluffy. Add the almond flour, coconut flour, baking powder, and a pinch of salt, mixing well. Pour in the melted butter and vanilla extract, stirring until the batter is smooth. Fill the madeleine molds about two-thirds full with the batter. Bake the madeleines for 10–12 minutes, or until golden brown. Check doneness by inserting a toothpick into the center—if it comes out clean, they are ready. Let the madeleines cool completely on a wire rack.
How to Make Sugarfree White Chocolate Glaze
Melt the Steviala White Chocolate using a bain-marie or microwave. Add the butter and stir until a smooth mixture forms. Add a few drops of green food coloring and mix until you achieve your desired shade. Let the glaze cool slightly so it thickens and adheres better to the madeleines.
Decorating the Madeleines
Dip the tops of each madeleine into the green white chocolate glaze. Place the dipped madeleines on a baking sheet lined with parchment paper and refrigerate for at least 1 hour to set the glaze.
Assembling the Christmas Tree
Once the chocolate has hardened, assemble the tree using a serving tower. Insert toothpicks into the madeleines and secure them into the tower. Finish with a sprinkle of Steviala Frost for a snowy effect.
