This is a healthy gluten-free cake with the taste of Stracciatella! Do you also take plant-based cream cheese and butter? Ingredients

Gluten free and low carb stracciatella cake

  • 150 grams (plant-based) cream cheese
  • 100 grams unsalted (plant-based) butter (room temperature)
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 100 grams Steviala Kristal Sweet Vanilla
  • 200 grams Steviala low carb almond flour
  • 5 grams (gluten free) baking powder
  • 150 grams Steviala gluten free pure chocolate chips
  • Steviala Oh' Choc!

Baking supplies

Preparation

Baking a gluten free and low carb stracciatella cake

First, preheat the oven to 190 degrees. Then beat the cream cheese and butter with an electric hand mixer or whisk. Add the eggs and vanilla extract to this. Then add the Steviala Kristal Sweet Vanilla, the low-carb almond flour and baking powder. Next, mix it all into a smooth batter. Finally, add another 100 grams of Steviala Dark chocolate chips to the batter. Then pour this into a silicone cake tin or regular cake tin with baking paper. Then divide 10 grams of Steviala Dark Chocolate chips over the gluten-free and low-carbohydrate stracciatella cake.

You then bake it in the oven for +/- 1 hour. If the top starts to brown too much, cover the cake with aluminium paper. To be sure, check with a skewer whether the cake is cooked on the inside because every oven is different. Then let the low-carb and gluten-free stracciatella cake cool. Finally, have some Steviala Oh'Choc! and divide this over the gluten-free and low-carb stracciatella cake for garnish.
