Everyone knows Pim's cookie or rather, Jaffa cakes. Have you heard of these cute little cakes? None other than Anne from Funandhealthyfood made these delicious low carb Jaffa cakes with Steviala almond flour and Steviala Kristal Sweet Vanilla. The low carb Jaffa cakes have a soft fluffy cake topped with sugarfree orange jam and a crispy layer of chocolate on top.
You can also choose to make your own sugarfree low carb orange jam. However, they also sell tasty varieties these days. Should you not like orange, you can of course substitute it for a jam variety you do like. The cakes are very similar to the sugarfree Victoria Sponge cake. Wonderfully fluffy and versatile! In addition, the low carb Pims cookies also have fine macros, so you can enjoy a tasty snack without worry.
Ingredients
Low carb Jaffa cakes
- 2 eggs
- 30 grams Steviala almond flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 15 grams Steviala Kristal Sweet Vanilla
- 10 grams butter
Orange jam without sugar
- 1 gelatin sheet
- 75 grams sugarfree orange jam
- 10 ml water
- squeeze of Steviala drops Orange Splash
Sugar free topping
- 100 grams Steviala Dark Chocolate Melties
- optional: 1/4 teaspoon orange extract

Preparation
Making sugarfree Jaffa cakes
Preheat the oven to 180 degrees. Next, melt the butter. After that, split the eggs. Next, beat the egg whites until stiff along with the Steviala Kristal Sweet Vanilla. In another bowl, mix the remaining ingredients, including the egg yolks, into an even batter. Next, use a spatula to add 1/4th of the beaten egg whites into the almond flour. Then you can lightly add the rest into the egg whites. You then divide the batter into 12 cupcake molds. Then bake the low carb jaffa cakes for about 12 minutes in the oven. Then let them cool completely outside the oven. In the meantime, make the orange jam.
Sugarfree orange jam
Soak 1 gelatin sheet in cold water for at least 10 minutes. Next, add the remaining ingredients to a saucepan. Heat it until everything is melted together. Then add the gelatin sheet while stirring. Then turn off the heat and let the orange jam for low carb Jaffa cakes cool to room temperature. Next, add the Steviala Orange Splash drops and stir well. Taste to see if it is sweet enough and if not, add some more Orange Splash drops.
Next, grab the cooled Jaffa cakes. Then add a spoonful of orange jam in the center of each cake. Then put the low carb Jaffa cakes in the refrigerator for 30 minutes.
Sugarfree chocolate topping
Add a small layer of water in a saucepan. Turn the stove on medium-high. Then place a heatproof container on top of this with the chocolate and orange extract in it. Then melt the chocolate using the au-bain-marie method. After that, take the low carb Jaffa cakes out of the refrigerator and spread the melted chocolate over them. Then put them back in the refrigerator for 10-15 minutes. The low carb Jaffa cakes are ready to serve. You can keep them in the refrigerator for about 7 days. You can also freeze them and they will be tasty for about 3 months.
