Everyone knows them, but not everyone has made them yet. They are known as cinnamon rolls. There are many different variants online, but this recipe has been specially adapted for you! Namely sugar-free and low-carb cinnamon rolls. Made with a batter of mozzarella and Steviala almond flour. Deliciously sweetened with Steviala Heavenly Dark, Steviala Ery-Bronze and Steviala Frost. Ingredients

Low carb and sugar free cinnamon rolls

  • 200 grams shredded mozzarella
  • 60 grams cream cheese
  • 100 grams Steviala almond flour
  • 1 egg
  • 1 teaspoon vanilla extract
  • 20 grams Steviala Frost Cinnamon
  • 10 grams baking powder

Filling without sugar

  • 70 grams melted butter
  • 10 grams Steviala Heavenly Dark
  • 40 grams Steviala Ery-Bronze
  • 2 teaspoons cinnamon
  • crushed pecan nuts (optional)

Sugar free glaze

  • 30 ml whipping cream
  • 10 grams Steviala Frost Vanilla
  • few drops vanilla extract
  • pinch of salt

Baking supplies

  • baking thin / oven dish of 28 x 18 cm
  • saucepan

  • mixing bowl

Preparation

Baking low carb and sugar free cinnamon rolls

Start by weighing and preparing all ingredients. Then melt the mozzarella together with the cream cheese and vanilla extract in a saucepan. Next, mix the almond flour, Frost and baking powder together in a mixing bowl. When the mozzarella has melted well, turn off the heat. Then add the almond flour to the mozzarella mixture while stirring. Halfway through you also add the egg, the Steviala Frost and baking powder. Next, keep stirring with a spatula until a nice dough is formed. Then place the dough on a piece of baking paper. Then place another piece of baking paper on top and roll out the dough thinly.

Make sure that a square shape is created, this will be easier with rolling out later. Then put the dough in the fridge for 10 minutes. Meanwhile, move on to the filling for the low-carb cinnamon rolls. Meanwhile, preheat the oven to 200 degrees hot air.

Sugar free filling

Mix the butter together with the Heavenly Dark. Then remove the dough from the refrigerator. Brush the dough with the butter mixture. Then divide the Ery-Bronze and cinnamon over it. Then use the baking paper to roll up the dough tightly. Brush the top of the dough with the remaining butter mixture. Then cut the dough into 9 low carb cinnamon rolls. (tip: wetting your knife helps when cutting). Place the cinnamon rolls in an oven dish, keep a little distance, because they will expand during baking.

Low carb and sugar free cinnamon rolls

Bake the sugar-free cinnamon rolls in the oven for 15 minutes. Then bake them in the oven for another 15-20 minutes, but this time covered with aluminium foil. The low-carb cinnamon rolls are ready when the dough is golden brown and your fork comes out dry when you poke it. Then remove the baking dish from the oven and continue making the glaze.

Sugar free glaze

Add all ingredients to a mixing bowl. Then beat with a mixer to desired thickness. You can choose to whip the cream until semi-stiff so that you can pour the icing. However, it is also very tasty when fully whipped! Divide the glaze over the low-carb cinnamon rolls and enjoy!
