Low carb white chocolate mousse

  • 50 grams low carb cookies
  • 250 ml whipping cream
  • 150 grams Steviala White Chocolate
  • raspberries for decoration

Making low carb white chocolate mousse

Start by crushing the low carb cookies, for example, by placing them in a plastic bag and rolling over them with a rolling pin. Next, melt 150 grams of white chocolate using a double boiler or in the microwave at short intervals, stirring regularly until the chocolate is completely melted and smooth. Allow it to cool slightly.

In another bowl, whip 250 ml of whipping cream until stiff peaks form. Make sure the cream is well chilled before you start whipping. Now, gently fold the melted white chocolate into the whipped cream using a spatula until everything is well combined. Do this gently to retain the fluffiness.

Then, divide the crushed low carb cookies among the bottom of glasses or bowls. Pour the low carb white chocolate mousse on top of the cookie crumbs. Place the glasses or bowls in the refrigerator and let the mousse set for at least 2 hours.
