Low carb cheesecake cake with red fruit, that's sugar-free delight! You read that right, a cheesecake cake! Elke of @El__keto combines these two dishes into one delicious treat in this recipe. The recipe consists of two layers. The cake layer is made from almond flour, eggs, and Greek yogurt. Elke used Steviala Kristal Sweet and Sweet & Vanilla for a deliciously sweet flavor. Then Elke made the cheesecake layer based on cream cheese, eggs, and arrowroot powder. This is a gluten-free binder. This layer is also flavored with Steviala Kristal Sweet Vanilla. Doesn't that all sound delicious? Finally, Elke added some red fruits for a tasty and fruity flavor!

Sugarfree cake layer

  • 165 grams Steviala almond flour
  • 25 grams Steviala Kristal Sweet
  • 1 tablespoon Steviala Sweet & Vanilla
  • 3 eggs
  • 2 teaspoons baking powder
  • 100 grams Greek yogurt
  • 100 grams red fruits

Sugarfree cheesecake layer

  • 150 grams cream cheese
  • 30 grams Steviala Sweet Vanilla
  • 2 eggs
  • 30 grams sour cream
  • 1 tablespoon arrowroot powder

Preparation

Making the sugarfree cake layer

Start by preheating the oven to 150 degrees Celsius. Then, take a mixing bowl and add the eggs to it. Beat the eggs until they become fluffy using an electric hand mixer. This can take about 8 to 10 minutes. Then add Steviala Kristal Sweet and mix it well. Next, add Greek yogurt, almond flour, Steviala Sweet & Vanilla, and baking powder. Mix this until it becomes a smooth batter. Pour this batter into a baking pan with parchment paper.

Making the sugarfree cheesecake layer

Next, you'll work on the cheesecake layer. First, mix the cream cheese with the sour cream. Then add Steviala Kristal Sweet Vanilla and mix it well. Add the eggs one by one and mix them until it becomes a fluffy batter. Then, take a smaller bowl and mix a few tablespoons of the cheesecake batter with 1 tablespoon of arrowroot powder. Whisk this well until there are no lumps. Then add this to the rest of the cheesecake layer.

Making the low carb cheesecake cake

Slowly pour the cheesecake mixture into the cake batter. Then, place the baking pan in the oven for 60 minutes. After 30 minutes, distribute some red fruits on the top of the cake. Finally, let the low carb cheesecake cake cool completely before serving.
