Sugar-free apple gingerbread muffins

- 200 g flour
- 2 teaspoons cream of tartar
- 2 tablespoons gingerbread spices
- 1/4 teaspoon salt
- 100 ml milk
- 2 eggs
- 35 g Steviala Frost sugar-free icing sugar
- 80 ml sunflower oil
- 1 teaspoon vanilla extract
- 2 large apples
- optional: 30 g pecans

Preparation
Making Sugar-Free Apple Gingerbread Muffins
Preheat the oven to 180°C (350°F) and line a muffin tin with paper muffin cups. Sift the flour, baking powder, baking soda, speculaas spices, and salt into a large bowl. In a separate bowl, whisk the eggs and combine them with the milk, sunflower oil, vanilla extract, and Steviala Frost sugar-free powdered sugar substitute. Finally, add the wet ingredients to the dry ingredients and mix until smooth. Peel and dice the apples, then stir them into the batter.
Fill each muffin cup about three-quarters full with the batter. Top with a few slivered pecans, if desired. Bake the sugar-free apple gingerbread muffins in the preheated oven for 20-25 minutes, or until a skewer inserted into the center of a muffin comes out clean. Finally, remove the muffins from the oven and let them cool in the pan for a few minutes before transferring them to a wire rack to cool completely.
