Ingredients
Sugarfree gingerbread cookies
- 75 grams butter
- 50 grams Steviala Kristal Sweet
- 1 egg
- 175 grams Steviala almond flour
- 1 tablespoon gingerbread spices
- 1 teaspoon baking powder
- pinch of salt
Sugarfree vanilla buttercream
- 100 grams softened butter
- 50 grams Steviala Frost Vanilla

Preparation
Making sugarfree gingerbread cookies
First, start by working on the gingerbread cookies batter. Then mix the egg until fluffy and then add the Steviala Kristal Sweet. Next, add the baking powder, gingerbread spices, and a pinch of salt. Then, melt the butter in a saucepan. Let it cool slightly and then pour it into the other ingredients. Meanwhile, stir with a whisk (or in the food processor) until all the ingredients are combined. Wrap the sugarfree gingerbread cookies dough in plastic wrap and let it rest in the freezer for 15 to 30 minutes.
Meanwhile, preheat the oven to 180 degrees Celsius. Then shape the sugarfree gingerbread cookies dough into 16 balls and place them on a baking sheet lined with parchment paper. Furthermore, place the baking sheet in the oven for 30 minutes or until the gingerbread cookies turn a nice golden brown. Allow the cookies to cool completely.
Making sugarfree vanilla buttercream
Meanwhile, you can also start working on the sugarfree vanilla buttercream for these sugarfree gingerbread cookies. Make sure the butter is at room temperature. Mix the butter with the Steviala Frost Vanilla (or one of the other Frost flavors, such as Cinnamon). Then scoop the buttercream into an icing bag and let it rest in the refrigerator for 30 minutes. If the butter separates during the whipping process, fill a bowl with hot water. Next, place the bowl with the whipped butter on top and continue mixing with an electric hand mixer until the butter becomes soft and smooth.

Once the cookies have cooled, you can assemble these sugarfree gingerbread cookies. Pipe the sugarfree vanilla buttercream onto half of the cookies. Then, place the other half of the cookies on top. Now, you can indulge in these sugarfree gingerbread cookies!
