Low carb cheesecake bites, you will definitely enjoy this recipe! The crust of the these low carb cheesecake bites are made of Steviala low carb almond flour, coconut flour and the Steviala 2 Sweet. This results in a sweet and crunchy crust. The cheesecake layer is creamy and sweet. It is made of fresh cream cheese, eggs, Steviala Frost and the Ne York Cheesecake drops.

You can easily vary with this basic recipe. Serve these low carb cheesecake bites with some fresh fruit or with some melted Steviala Dark Chocolate Melties. Or serve with a sugar free lemon or vanilla curd. The choice is all yours!


Low carb cheesecake bites crust

  • 100 grams Steviala almond flour
  • 20 grams Steviala coconut flour
  • 75 grams Steviala 2 Sweet
  • pinch of salt
  • pinch of cinnamon
  • 100 grams butter

  • 400 grams cream cheese
  • 2 eggs
  • 75 grams Steviala Frost
  • 2 teaspoons vanilla extract
  • juice of half a lemon
  • 2 pinches of Steviala New York Cheesecake drops

Baking low carb cheesecake bites

First, preheat your oven to 175 degrees celsius. Make sure that all ingredients are at the same temperature. Next, you add the almond flour, coconut flour, Steviala 2 Sweet and a pinch of salt and cinnamon to a mixing bowl. Then you add cubes of butter. Then you knead all ingredients with your hands until you have a ball of dough. Then line the baking tin with baking paper. Divide the crust of the low carb cheesecake bites on the bottom of the baking tin. Put the baking tin in the preheated oven for 25 minutes.

Making the low carb cheesecake layer

Next, you are going to start with the low carb cheesecake layer. First, you whip the cream cheese with an electric hand mixer. Then you add the Steviala Frost, vanilla extract and the juice of half a lemon. Hereafter you mix the eggs one at a time. Then mix this until it becomes fluffy. At last, you add the Steviala New York Cheesecake drops to taste and mix it one more time. Thereafter you pour the cheesecake layer on the cooled down crust.

Wrap up the cake tins with aluminium foil. By doing so, the top of the cheesecake won't crack in the oven. Then you place the baking tin in an oven dish. Pour some boiling water in the baking dish. Then carefully place the baking dish in the oven and bake for 40 minutes. After these 40 minutes, let the cheesecake cool down for one hour in the oven itself. Thereafter you take the cheesecake bites out of the oven and let them cool down in the fridge for at least 4 hours.

Cut out the cheesecake bites after 4 hours of cooling down. Next, it is up to you! Serve these low carb cheesecake bites with for example melted Steviala Dark Chocolate Melties and enjoy!
