Who doesn't know them? Lady finger biscuits! These brittle cookies are delicious to eat on their own or to use in a tiramisu or cake! The classic ladyfinger biscuits have a sugar coating and therefore contain a lot of carbohydrates. With this recipe, you can make your own sugarfree lady fingers with the table sugar substitute from Steviala, namely the Kristal Sweet! Sugarfree lady fingers biscuits without sugar

  • 3 eggs
  • 50 grams Steviala Kristal Sweet
  • 10 ml vanilla extract
  • pinch of salt
  • 50 grams Steviala almond flour
  • 50 grams wheat flour or wheat gluten
  • 20 grams cornflour
  • extra Steviala Kristal Sweet for a sugar layer

Baking supplies

  • food processor or electric hand mixer
  • piping bag with 1 cm round nozzle
  • baking tray with baking paper


Making sugarfree lady fingers

First, start by preheating the oven to 180 degrees. Also, line 2 baking trays with baking paper. Then separate the eggs. Add the egg whites to a large mixing bowl and beat until stiff, together with 30 grams of Steviala Kristal Sweet. Then, in another bowl, mix the egg yolks with the other 30 grams of Steviala Kristal Sweet, vanilla extract and a pinch of salt. You then beat the egg yolks with an electric hand mixer until they lighten in colour. Then add the beaten egg yolks in parts to the beaten egg whites. Then gently fold them through without losing too much volume.

Next, take another mixing bowl and sieve the almond flour, patent flour or wheat gluten and cornflour. Then add this in parts to the beaten egg whites. You then fold it in with a spatula until you get a nice smooth mixture.

Then spoon the sugarfree ladyfinger batter into a piping bag with a round nozzle of about 1 cm. You then pipe 45 ladyfingers on a baking tray with baking paper. Sprinkle some extra Steviala Kristal Sweet table sugar substitute over the lady fingers. Then place the baking sheet in the oven for 13 minutes. Next, let the lady fingers cool down completely. Are the lady fingers still a bit soft after cooling? Then place them on an oven rack and bake them for another 3 minutes in the oven. This makes the lady fingers nice and crispy. Let them cool down completely and then they are ready to eat!
