Sugar free Christmas cheesecake? Yes, you read that right! This recipe is super easy, and with a few ingredients, you can have an ideal cake within 2.5 hours that you can even eat for breakfast. AMAZING! For the crust, our delicious almond flour has been used. However, you can also choose to take 50 grams of ready-made sugar free cookies of your choice or, for example, bake and use 1/3 of our low-carb almond cookies as the crust. In that case, you can optionally omit the additional sweetener for the crust. This wintery, healthy, and sugar free Christmas cheesecake brings extra joy during the holiday season! Sugar free Christmas cheesecake (crust)

  • 3 tablespoons Steviala Kristal Sweet Vanilla
  • 50 grams Steviala almond flour or sugarfree cookies of your choice, see introduction
  • 10 grams sunflower oil

Filling for sugar free Christmas cheesecake (1st layer)

  • 200 grams mild French quark
  • 3 tablespoons Steviala Kristal Sweet Vanilla
  • 4 gelatin sheets
  • 30 grams plain egg white powder

2nd layer

  • 50 grams forest fruits
  • 1 tablespoon Steviala Kristal Sweet Vanilla
  • 2 gelatin sheets

Making sugar free Christmas cheesecake

Crumble the cookies using a food processor or measure the almond flour. Then, add the oil and Steviala Kristal Sweet Vanilla. Mix until it forms a crumbly mixture. Line the baking tin with baking paper. Then, pour the crumble mixture into it. Press firmly to create a solid crust.

Soak the gelatin sheets in cold water for 5 minutes. Meanwhile, heat 200 ml of water in a saucepan until it's almost boiling. Add the gelatin sheets and stir well until they are completely dissolved in the water. Then, for the 1st layer, mix the quark, Kristal Sweet Vanilla, and egg white powder together until smooth. Pour 150 ml of the gelatin water into this mixture. Mix again until smooth. Then, pour the mixture over the crust.

For the second layer, add the Kristal Sweet Vanilla and forest fruits to the saucepan with the gelatin water. Let it simmer on low heat for 5 minutes. Then, use a hand blender to blend it into a smooth mixture. Carefully pour the second layer over the first layer and place the sugar free Christmas cheesecake in the baking tin in the refrigerator for at least 2 hours.

Carefully loosen the edges of the sugar free Christmas cheesecake with a small knife and remove the sides of the tin. Decorate the sugar free Christmas cheesecake with, for example, dark chocolate or low carb shortbread cookies. Enjoy!
