These sugarfree Christmas cupcakes are made with Steviala almond flour, coconut flour, and 2 Sweet. By using buttermilk and baking soda, these cupcakes have a delightful fluffy texture.

  • 10 grams Steviala coconut flour
  • 5 grams baking powder
  • 50 grams Steviala 2 Sweet
  • 5 grams vanilla extract
  • 30 ml oil
  • 2 eggs
  • 30 ml buttermilk
  • 5 grams baking soda
  • 20 grams cocoa powder

Sugarfree white chocolate cheesecake frosting

  • 100 grams butter
  • 100 grams cream cheese
  • 3 ml vanilla extract
  • 30 grams Steviala Frost
  • 100 grams Steviala white chocolate
  • red food coloring

Preparation

To make sugarfree Christmas cupcakes, first, begin by preheating the oven to 180 degrees. After that, you can start preparing the cupcake batter. In a large mixing bowl, combine all the ingredients for the cupcakes. Using a whisk, stir until the batter becomes homogeneous. Then, pour the batter into 6 cupcake molds. Place the cupcakes in the oven and bake for 25 minutes. After 25 minutes, use a toothpick to check if the cupcakes are cooked since every oven varies. Allow the cupcakes to cool completely.

Making sugarfree white chocolate cheesecake frosting

Meanwhile, you can proceed with making the sugarfree white chocolate cheesecake frosting. Make sure all the ingredients are at room temperature. Melt the sugarfree white chocolate using the double boiler method. Heat water in a small saucepan and place a heat-resistant bowl on top. Add the white chocolate and stir until it melts completely. Set it aside to cool.

Next, mix the butter together with the Steviala Frost and vanilla extract until it becomes light and fluffy. This process may take about 5 minutes. Then, add the melted white chocolate and cream cheese to the butter mixture. Incorporate them together using a spatula until a homogeneous frosting is achieved.
