Low carb bread
In short, low carb bread is bread with a reduced carbohydrate content. Low carb bread should contain at least 30% less carbohydrates compared to normal bread. Normal bread, such as whole wheat bread, consists of +/- 35 to 45 grams of carbohydrates per 100 grams. In this bread you can replace the wheat flour with coconut flour, almond flour or soy flour. All these low carb flours contain a higher protein content and a lower carbohydrate content.
Ingredients
Low carb bread
- 120 grams melted butter
- 3 tablespoons liquid coconut oil
- 8 big or 6 small eggs with 1 teaspoon of baking powder
- 90 grams Steviala almond flour
- 1/2 teaspoon xanthan gum (optional), flax seed or chia seed
- 45 grams Steviala coconut flour
- 1/2 teaspoon salt

Preparation
Baking low carb bread
First, preheat the oven to 180°C. Then break the eggs and mix them in the food processor until nice and smooth. Add the rest of the ingredients until you get a nice dough. Then spread the dough evenly in a greased 23 by 13 cm baking tin. Bake in the oven for +/- 40 minutes or until the top of the bread is brown. Let the low-carb bread cool slightly.
