Tell me, how cute do these sugarfree coconut lemon waffles look? Sanne from Foodbysann made these too cute looking coconut lemon waffles. They look delicious, but they are also super easy to make. You mix all the ingredients into a firm dough and then bake the waffles in a waffle iron. It doesn't get any easier than that! These waffles are made with low carb coconut flour from Steviala. In addition, they are flavored with the Sweet & Vanilla which makes them taste nice and sweet with the delicious taste of vanilla! Sanne then served these sugarfree coconut lemon waffles with fresh fruit and a splash of Sweet & Vanilla. What a treat!

Sugarfree coconut lemon waffles

  • 1 egg
  • 40 grams Steviala coconut flour
  • 10 grams Steviala Sweet & Vanilla
  • 75 grams quark or Greek yogurt
  • 1 teaspoon baking powder
  • 1 teaspoon lemon zest + 1 teaspoon lemon juice

Baking supplies

  • mixing bowl
  • waffle iron
  • baking spray or oil to grease the waffle iron

Making sugarfree coconut lemon waffles

First, beat the egg in a bowl and then add the Sweet & Vanilla. Afterwards, also add the quark, lemon juice and zest. Lastly, add the coconut flour and baking powder. Then knead it into a dough ball. Divide this dough ball into 10 equal pieces and roll small balls from them. Next, heat oil or baking spray in the waffle iron and fry the waffles one by one. Be careful, the waffles remain a little light in color because of the coconut flour. When the top is golden brown they are good! Finally, you can serve these delicious sugarfree coconut lemon waffles with your favorite toppings, such as fresh fruit or, for example, the Steviala Sweet & Vanilla.
