Sugarfree New York Cheesecake, you want to try this! Elke from El__Keto made this delicious sugarfree New York Cheesecake. The bottom is made of chopped almonds and butter. Elke then sweetened the bottom with Steviala Frost for a deliciously sweet taste. A super easy base to make! Elke then sweetened the cheesecake filling with the Steviala Kristal Sweet Vanilla . This makes this cheesecake sugarfree with a delicious vanilla flavor.


Sugarfree nut base

  • 130 grams almonds
  • 28 gram Steviala Frost
  • 55 grams butter

Sugarfree New York Cheesecake filling

  • 300 grams cream cheese
  • 65 grams sour cream
  • 2 eggs
  • 65 grams Steviala Kristal Sweet Vanilla

Sugarfree fruit layer

  • 250 grams frozen raspberries
  • 2 tablespoons Steviala Frost
  • 3 gelatin sheets + a little water

Making sugarfree nut crust

First start by preheating the oven to 150 degrees. Then finely chop the almonds. You then melt the butter and mix it with the chopped almonds, together with the Steviala Frost. Furthermore, cover the spring form with parchment paper and divide the nut base in the spring form.

Making sugarfree New York Cheesecake Filling

Then you get started with the cheesecake filling. Mix the cream cheese, sour cream, eggs and Steviala Kristal Sweet Vanilla in a bowl. Then mix this with a hand mixer to a smooth batter. You then pour this batter over the nut base. Next, place the baking tin in the oven for 60 minutes. Then let the cheesecake cool in the oven and then place it in the refrigerator for at least 3 hours.

Making a sugarfree raspberries layer

Finally, you get to work making the sugarfree raspberry layer. To do this, take a saucepan and add the frozen raspberries. Let the raspberries thaw slowly and reduce to a sauce. Then add the Steviala Frost and mix well. Meanwhile, soak 3 gelatine sheets in a bowl of water. Then add the soaked gelatine sheets to the saucepan and let it dissolve in the raspberry sauce. Then pour this over the now cooled cheesecake. Let the sugarfree New York Cheesecake set in the fridge for 2 hours.
