
High-protein syrup waffle cheesecake
Want to get a healthy, fit start to your day? With this recipe you can make a delicious protein-rich stroopwafel cheesecake the day before. You can then enjoy it perfectly in the morning. By using, among other things, the Steviala low-carb almond flour and Steviala Ery-bronze brown sugar substitute, you can make delicious crunchy stroopwafel pieces that are perfect for the cottage cheese and as a topping.
The protein-rich stroopwafel cheesecake has a protein-rich cheesecake base made from, among other things, cottage cheese and Steviala, low-carb coconut flour and Ery-bronze. For this cheesecake, a sugar-free and protein-rich stracciatella cottage cheese has been chosen, into which you can stir stroopwafel pieces if desired, or you can use the stroopwafel pieces only as a topping. You can of course finish the topping with the tastiest caramel syrup substitute, namely the Caramel Crush from Steviala.
Ingredients
High protein cheesecake (bottom)
- 100 g cottage cheese
- 1 large egg
- 1 egg white
- 15 g Protein powder natural Live Puri
- 25 g Steviala coconut flour
- 25 g Steviala Ery-Bronze
- pinch of salt
Sugar-free syrup waffles
- 150 grams of Steviala almond flour
- 20 grams of protein powder natural
- 40 grams melted butter
- 50 grams of cream cheese
- 1 egg
- 50 grams of Steviala Ery-Bronze
- 3 tsp cocoa powder
- 1 tsp xanthan gum
Cottage cheese topping without sugar
- 200 g Straciatella curd
- 1 Stroopwafel in pieces
Sugar-free topping
- Steviala Caramel Crush
- Syrup waffle pieces

Preparation
Sugar-free Syrup waffles
First make the syrup waffles by mixing all the ingredients of the stroop waffles together into a smooth dough ball. This recipe uses cocoa syrup waffles, but you can also leave out the cocoa powder. Prepare the stroopwafels with a stroopwafel iron and then let them cool. They don't have to be perfect, because you still make pieces of them! For this low-carb and protein-rich stroopwafel cheesecake you only need a few pieces of the stroopwafels. You can eat the rest as is or make one of the other Steviala stroopwafel recipes. Think of a delicious cake with stroopwafel pieces in it.
High protein cheesecake
Preheat the oven to 175 degrees hot air and prepare a 15 x 15 cm baking dish.
Add all the ingredients for the protein-rich cheesecake base to a mixing bowl and mix well. Pour it into the oven dish and bake for 25 minutes. Then let it cool outside the oven.
When the base has cooled, you can spoon the cottage cheese topping on it and finish it with the stroopwafel pieces and Steviala Caramel Crush. It is even tastier the next day because the flavors are then well absorbed, so it is perfect to make this low-carb and protein-rich stroopwafel cheesecake a day in advance!
