Low carb scones with clotted cream are the perfect addition to your Sunday breakfast. You can also use them for a sugar free and low carb high tea. This recipe uses the new Steviala product, namely the Steviala Kristal Sweet Vanilla. The Kristal Sweet vanilla resembles regular vanilla sugar but contains no sugars, carbohydrates or calories that are absorbed by the body. This makes this a great sugar substitute that you can use in your healthy, sugar free and/or low carb lifestyle. In addition, the sweetening power is also up to twice as great compared to traditional vanilla sugar. You too can now enjoy carefree without feeling guilty!

Ingredients

Low carb scones with clotted cream

  • 75 grams Steviala almond flour
  • 25 grams Steviala coconut flour
  • 1 whole egg
  • 1 egg yolk
  • 1/2 teaspoon yeast
  • 30 grams Steviala Kristal Sweet Vanilla
  • 70 grams cream cheese
  • 30 grams Greek yoghurt
  • 1/2 teaspoon gingerbread spices

Sugar free clotted cream

  • 50 ml sugar free whipping cream
  • 100 grams mascarpone
  • 25 grams Steviala Frost Vanilla

Topping without sugar

  • Steviala Supreme Strawberry

Baking supplies

  • 5 silicone muffin tins

Preparation

Making low carb scones with clotted cream

Start by preheating the oven to 180 degrees hot air. Then add all the ingredients for the scones in a mixing bowl. You then mix everything for about 2 minutes at high speed. Then divide the batter between the 5 muffin tins and place them on the baking tray. Next, put in the oven and bake for 20 minutes at 180 degrees. You then lower the temperature to 160 degrees and bake for another 30 minutes.

Then remove from the oven and continue making the sugar-free clotted cream. You then weigh the ingredients for the clotted cream. Then add the ingredients to a mixing bowl. Then mix at high speed until a thick cream is formed. Your clotted cream is now ready.

In this recipe, instead of jam, another new product from Steviala has been chosen, namely the Steviala Supreme Strawberry. The Steviala Supreme Strawberry is a sugar free strawberry syrup. It is also not only sugar free, but also gluten free and low in carbohydrates. Because of the sweet taste and smell of the Steviala Supreme Strawberry you have a delicious combination with the scones.
