With this hot weather, there is nothing better than the occasional ice cream, and preferably a Magnum! But that also provides an awful lot of calories. Not to mention the amount of sugar you eat. Fortunately, there is another way! With this recipe, you can easily make your own low carb peanut butter magnums. Besides low carb, the peanut butter magnums are also sugarfree. In total, you can make as many as 6 low carb peanut butter magnums with this recipe. With many thanks for this delicious recipe to Sabine Wildenborg!

Ingredients

Low carb sugarfree magnums

  • 200 ml whipping cream
  • 25 grams Steviala Kristal Sweet
  • 60 ml almond milk
  • 1 teaspoon vanilla extract
  • 130 grams peanut butter (Lidl)
  • 100 grams Steviala Dark or Milk Chocolate Melties
  • finely ground nuts of your choice
  • if desired, extra Steviala Caramel Crush for the filling

Preparation

Making low carb and sugarfree magnums

Beat the whipping cream together with the Steviala Kristal Sweet until stiff. Then add the almond milk, vanilla extract and peanut butter. Add in additional Caramel Crush if necessary for a salted caramel-peanut butter flavor. Then mix all the ingredients together and pour the mixture into the magnum molds.

Place the molds in the freezer for at least 3 hours. Meanwhile or the day after, you have time to make the chocolate layer. To do so, melt 100 grams of Steviala Dark or Milk Chocolate Melties.

Once the ice cream is frozen, dip them in the melted chocolate. The chocolate layer will harden immediately. Then you can quickly place them back in the freezer. What is also very tasty is to finish them with some chopped nuts. Prepare a plate with chopped nuts, dip the popsicles in the nuts once they are coated with chocolate. Just let them harden in the freezer and enjoy!
