The pie is then filled with a sugar free vanilla pudding layer. Iris used the Steviala Kristal Sweet Vanilla for a delicious sweet vanilla taste. Ingredients

Sugar free kiwi pie

  • 80 grams Steviala coconut flour
  • 2 eggs
  • 50 grams butter (room temperature)
  • 1 teaspoon vanilla extract
  • pinch of salt
  • 60 grams Steviala Ery-Bronze

Sugar free vanilla pudding

  • 300 ml (whole) milk
  • 3 egg yolks
  • 1 tablespoon custard powder (or cornstarch)
  • 30 grams Steviala Kristal Sweet Vanilla
  • 3 kiwis

Preparation

Making a sugar free kiwi pie crust

First, start by preheating the oven to 180 degrees. Then mix the coconut flour, eggs, butter, vanilla extract, salt and Steviala Ery-Bronze until a crumbly dough is formed. Then grease a baking pan and spread the dough over the bottom. Place the baking pan in the oven for about 25 minutes or until the pie crust for this sugar free kiwi pie is golden brown.

Making sugar free vanilla pudding

Then get started with the vanilla pudding layer for this sugar free kiwi pie. Beat the egg yolks first, together with the Steviala Kristal Sweet Vanilla and custard powder. Meanwhile, bring the milk to a boil in a heavy-bottomed saucepan. Then slowly pour the warm milk into the eggs. Keep stirring so that the eggs don't boil too far and then pour this mixture back into the saucepan. Then let the pudding simmer while you keep stirring over medium-high heat. Once the pudding has thickened, remove it from the heat. Then let the pudding cool. Place a layer of plastic foil on top of the pudding to prevent a skin from forming.

When the vanilla pudding has cooled you can spread it over the bottom. Then decorate the sugar free kiwi pie with kiwi slices and enjoy!
