Sugarfree strawberry cakeroll batter
- 4 eggs
- 50 grams Steviala almond flour
- 30 grams Steviala Kristal Sweet
- 1 teaspoon baking powder
- pinch of salt
- 5 ml vanilla extract
- red food coloring
- pink food coloring
Sugarfree strawberry cream cheese filling
- 200 grams cream cheese
- 50 ml whipping cream
- 50 grams Steviala Supreme Strawberry
- 1 gelatin sheet
- 100 gram fresh strawberries
- 50 grams Steviala Oh' Choc! chocolate topping
- mixing bowl
- electric hand mixer or food processor
- 2 icing bags
- baking sheet with baking paper
Making a sugarfree strawberry cakeroll
Start by preheating the oven to 180 degrees Celsius. Then mix the almond flour, Kristal Sweet, baking powder, salt, vanilla extract, and 2 whole eggs in a large mixing bowl. Separate the other 2 eggs. Add the egg yolks to the mixing bowl. Mix the 2 egg whites until stiff. Then add the batter and fold it into the egg whites with a spatula without losing too much volume. Take a few tablespoons of this batter and add it to another small bowl. Give it a nice red color with the red food coloring. Also, color the remaining batter with pink food coloring drops.
Divide the batter into two icing bags. Then cover a baking sheet with parchment paper and draw hearts on the parchment paper with the red batter. Next, fill the gaps between the hearts with the pink batter. Bake the sugarfree strawberry cakeroll for about 20 to 25 minutes in the oven.
Making the sugarfree strawberry cream cheese filling
Meanwhile, start working on the sugarfree strawberry cream cheese filling. First, mix the whipping cream and cream cheese until creamy. Then add Steviala Supreme Strawberry to it. Meanwhile, soak the gelatin sheet in a bowl of cold water. Heat a few tablespoons of the cream cheese mixture and then melt the gelatin sheet in this. Then pour this mixture into the rest of the cream cheese filling and stir well. Meanwhile, cut the fresh strawberries into small pieces.
Rolling up the sugarfree strawberry cakeroll
Rolling up the sugarfree strawberry cake roll can sometimes be a challenge. First, make sure to start working on it within 5 minutes of the cake roll coming out of the oven. Then the sugarfree strawberry cakeroll is still warm and flexible. Otherwise, the cake roll may break during rolling. Remove the sugarfree strawberry cakeroll from the parchment paper. Then spread the sugarfree strawberry cream cheese filling and fresh strawberries on the inside of the cake roll. Then gently roll up the cake roll and wrap it in plastic wrap. Next, let the sugarfree strawberry cakeroll rest in the refrigerator for at least 2 hours.
