Ingredients

Low carb crust

  • 100 grams Steviala almond flour
  • 35 grams Steviala Frost
  • 35 grams melted butter
  • 1/2 teaspoon vanilla extract

Sugarfree strawberry MonChou pies filling

  • 50 grams Steviala Supreme Strawberry
  • 15 grams Steviala Frost
  • 150 grams MonChou cream cheese
  • 100 ml whipped cream
  • 2 gelatin sheets + 25 ml whipped cream

Sugarfree strawberry topping

  • 45 grams Steviala Supreme Strawberry
  • 40 ml water
  • 75 grams pureed strawberries
  • 2 gelatin sheets

Preparation

Making low carb crust

To make these no-bake sugarfree strawberry MonChou pies, first, start by adding almond flour to a mixing bowl. To remove any lumps, then sift the flour using a sieve. After sifting, gently fold it together using a spatula. Next, add melted butter and vanilla extract to the mixture. Stir everything well and then use your hands to form a smooth dough ball. Divide this dough ball into 8 equal balls and place each one in a (silicone) muffin mold. Press the balls firmly and refrigerate the molds. Now, you can proceed to the next steps.

Making sugarfree MonChou filling

To make the sugarfree MonChou filling, soak the gelatin sheets for at least 10 minutes. Then, mix MonChou and Steviala Frost in a mixing bowl and blend until creamy. Then, add whipped cream and Steviala Supreme Strawberry. Mix everything at high speed until fluffy.

Now, heat 25 ml of whipped cream in a saucepan. Add the soaked gelatin sheets and stir until fully melted. Remove the pan from the heat. While continuing to mix, add the melted gelatin to the mixture. Once everything is well combined, remove the muffin molds from the refrigerator.

Evenly distribute the filling over the 8 cupcake crusts. You can use a spoon or fill the filling into a piping bag and snip off the tip. Then, refrigerate the pies for at least 4 hours to set.

Making sugarfree topping

Meanwhile, soak the gelatin sheets for the topping in cold water for at least 10 minutes. In a saucepan, combine Steviala Supreme Strawberry and water. Heat the mixture while stirring. Then, add the soaked gelatin leaves while continuing to stir. Once the gelatin is fully dissolved, remove the pan from the heat.

Remove the sugarfree strawberry MonChou pies from the refrigerator and sprinkle chopped strawberries on top. Finally, pour the melted Steviala Supreme Strawberry over them. Place the pies back in the refrigerator and let them set for at least 1 hour.
