There are already several recipes for donuts on the website. For example, this recipe for low carb donuts and one for sugar free donuts. Now donuts are always tasty and fun to vary. This is how these low carb blueberry donuts came to life. An airy batter for the donuts with the flavours of blueberries through it. And to make the recipe even more fun, a vanilla icing has been made. Steviala Frost Vanilla was used for this! The combination is one you definitely don't want to miss. Ingredients
Low carb blueberry donuts
- 30 grams Steviala low carb almond flour
- 15 grams Steviala low carb coconut flour
- 2 grams psyllium husk
- 120 ml water
- 30 grams butter
- 35 grams Steviala Kristal Sweet Vanilla
- 2 small eggs
- 6 grams baking powder
- pinch of salt
- 25 blueberries
Sugar free glaze
- 20 grams Steviala Frost Vanilla
- a few teaspoons of milk

- 16 mini donut baking mold

Preparation
Making low carb blueberry donuts
Mix the almond flour, coconut flour, psyllium husk together in a bowl. Then put a saucepan on the fire with the water, butter, salt and Kristal Sweet Vanilla. Next, let it come to a boil while stirring. Then lower the heat and add the flour batter. Stir this well with a spatula. Then turn off the heat and let the batter cool to room temperature. You then spoon the batter into a mixing bowl. Then add the baking powder and eggs while stirring. Mix the whole for 5 minutes with the mixer to a light batter. Then spoon the batter into a piping bag. Cut off the tip and fill 16 mini donut molds with the batter. Cut the blueberries in half and press them into the batter of the low carb donuts.
Bake the low carb blueberry donuts for 25-30 minutes on 180 degrees hot air. The donuts are ready when they are a nice golden brown colour. Then let the donuts cool completely outside the oven.
Making a sugar free glaze
Then add the ingredients for the glaze in a bowl. Use a fork to mix the icing until smooth. Is the consistency too thick? Then add some milk to it. Is it getting too thin? Then add some Steviala Frost Vanilla. Then divide the glaze over the donuts. Store the low carb blueberry donuts in a sealed container.
