With a beautiful sugarfree white chocolate pattern, you can make delicious low carb millionaire's shortbread! The crumbly base is made with low carb flours from Steviala. By using these flours, the millionaire's shortbread is not only low carb but also glutenfree. The caramel is made with Steviala Ery-Bronze and Steviala Heavenly Dark syrup substitute. Ingredients
Low carb millionaire's shortbread
- 95 grams melted butter
- 25 grams Steviala Kristal Sweet Vanilla
- 125 grams Steviala almond flour
- 20 grams Steviala coconut flour
- 6 grams baking powder
Sugarfree caramel filling
- 125 grams butter
- 100 grams whipping cream
- 25 grams Steviala Heavenly Dark
- 65 grams Steviala Ery-Bronze
Sugarfree topping
- 125 grams sugarfree Dark Chocolate Melties
- 25 grams sugarfree white chocolate
Baking supplies
- baking mold of approximately 18 x 18 cm
- spatula
- mixing bowl

- 2 heat-resistant bowls

Preparation
Making low carb millionaire's shortbread
Start by preheating the oven to 175 degrees Celsius. Then add all the ingredients for the base to a mixing bowl. Mix this with a spatula until it forms a dough ball. Line the baking mold with baking paper and then press out the dough ball. Bake the base for 15 minutes. Let the base for the millionaire's shortbread cool outside the oven.
Making sugarfree caramel sauce
Meanwhile, add the butter, Heavenly Dark, and Ery-Bronze to a saucepan. Let this melt while stirring. Then let it simmer for 5 minutes. Then, while stirring, add the cream. Let the caramel for the low carb millionaire's shortbread simmer for another 5 minutes. Stir until the caramel gets the thickness of thick yogurt. Then turn off the heat. Pour the caramel on the base of the millionaire's shortbread and spread it evenly. Then put the low carb millionaire's shortbread in the refrigerator until the caramel has hardened.
Making chocolate topping
Now put a saucepan with a layer of water on the heat. Then place a heat-resistant bowl on top and add the chocolate. Let the dark chocolate melt using the au-bain-marie method. Then remove the bowl with the dark chocolate and replace it with a clean bowl. Add the white chocolate and let it melt using the au-bain-marie method as well. Then remove the millionaire's shortbread from the refrigerator.
Pour the dark chocolate onto the millionaire's shortbread and spread it evenly. Then put the white chocolate in an icing bag and cut off a very small tip. Make white chocolate stripes from left to right on the dark chocolate. Then use a skewer and drag stripes through the white chocolate from top to bottom. You now have the pattern as shown in the photo. Then put the low carb millionaire's shortbread back in the refrigerator for at least 15 minutes. Then you can cut the millionaire's shortbread into 4 x 6 bars. Heat the knife before cutting, then it will slide through the chocolate layer.
Store the low carb millionaire's shortbread in a container in the refrigerator or freeze them

Written by Denise on 6-01-2022Dit is echt mijn favoriete koolhydraatarme snack! Ik vind hem hetzelfde smaken als de originele koolhydraatarme millionaires shortbread. Helaas moest ik de karamel 2 keer maken, omdat ik de eerste keer het vuur te hoog heb gezet en hij toen aanbrandde. Het duurt even voor het een dikke karamel wordt, maar uiteindelijk komt het goed. Top recept!!
