How about this low carb strawberry cake, for example? A deliciously creamy cake with fresh strawberries and the Strawberry Supreme. On top of that, you will find a sugar free cheesecake frosting, of course also sweetened with our new sugar free strawberry syrup. Enjoy!

Ingredients

Low carb strawberry cake

  • 100 grams soft butter
  • 50 grams Steviala Kristal Sweet Vanilla
  • 2 large eggs
  • 10 ml vanilla extract
  • 100 grams Steviala almond flour
  • 10 grams arrowroot powder
  • 1 teaspoon baking powder
  • 200 grams strawberries
  • 50 grams Steviala Supreme Strawberry
  • optional: red or pink food dye

Sugar free cheesecake frosting

  • 200 grams cream cheese
  • 30 grams Steviala Frost
  • 15 grams Steviala Supreme Strawberry
  • 10 ml vanilla extract
  • red or pink food dye

Preparation

Making the low carb strawberry cake

Start by preheating the oven to 190 degrees before you get started with this low carb strawberry cake. First, make sure all ingredients are at room temperature. Then beat the butter in a large mixing bowl until light and add the Steviala Kristal Sweet Vanilla. Then add the eggs one at a time and beat until fluffy. Finally, add the vanilla extract.

Then add the almond flour, arrowroot powder and baking powder and mix until smooth. Then puree the strawberries and mix with the Steviala Supreme Strawberry. Next, add this to the low carb strawberry cake batter and stir well. Add red or pink food dye if needed.

Then line a square baking tin with baking paper and pour in the low carb strawberry cake batter. Then bake the cake for at least 30 minutes and check with a skewer if it is cooked. Let the cake cool completely.

Making a sugar free cheesecake frosting

Meanwhile, make the sugar free cheesecake frosting. In a large bowl, combine the cream cheese, Steviala Frost, Steviala Supreme Strawberry, and vanilla extract. For a nice swirl effect, you can give part of this frosting a nice red colour. First, divide the white cheesecake frosting over the cooled low carb strawberry cake and then the red cheesecake frosting. Finally, decorate with sugar free chocolate flakes.

Tip against curdled cake batter

Is your cake batter curdled? Don't worry! This happens when you try to mix the ingredients at too high a speed or when the ingredients have different temperatures. Luckily, you can easily save your batter! Heat a large container with hot water (or a closed sink). Then place the mixing bowl with the cake batter in it and mix until smooth. As a result, all ingredients get the same temperature again and the curdling process stops.
