Sugarfree Valentine strawberry cheesecake
It's almost Valentine's Day! Surprise your loved ones with this delicious sugarfree Valentine strawberry cheesecake! It's sugarfree, low carb, and in addition also glutenfree. But did you know that you can also make the cheesecake lactosefree by using plant-based butter and lactosefree whipped cream and cream cheese. You'll need some patience because each layer needs to set in the fridge for a while, but it's definitely worth it for a romantic Valentine's Day!
In addition, in this recipe we used the new Steviala strawberry syrup substitute, which is available in the Steviala webshop.
Ingredients
Low carb cheesecake crust
- 75 grams almond flour
- 40 grams butter
- 30 grams Steviala Kristal Sweet
- pinch of salt
- pinch of cinnamon
Sugarfree Valentine strawberry cheesecake layer
- 350 grams cream cheese
- 100 ml whipping cream
- 50 grams Steviala Frost
- 5 ml vanilla extract
- Steviala strawberry drops
- 4 gelatin sheets
Sugarfree strawberry layer
- 400 grams frozen strawberries
- 50 grams Steviala Supreme Strawberry
- 4 gelatin sheets
Baking supplies
- mixing bowl
- square baking mold of 20 x 20 cm
- baking paper

- electric hand mixer or food processor

Preparation
Making the sugarfree Valentine cheesecake
First, preheat the oven to 180 degrees. Then mix the almond flour, Steviala Kristal Sweet, salt, and cinnamon in a mixing bowl. Add cubes of butter and knead it with your hands until it forms a smooth dough (or use a food processor). Then grease a 20x20 cm baking mold and line it with parchment paper. Spread the dough for the crust in the baking mold and keep a small ball of dough to make a crumble. Bake the crust for 20 minutes in the oven or until it turns a beautiful golden brown colour. Let the crust cool completely.
Making the low carb crumble
In the meantime, you can also make the low carb crumble. Add the remaining dough to a pan and crush it with a spatula. Bake until the crumbs turn a nice brown color. Let it cool completely so that the crumbs become crispy.
Making the first sugarfree cheesecake layer
Then, start making the cheesecake layer. Mix the whipped cream with the cream cheese. Then add Steviala Frost, vanilla extract, and strawberry drops. Soak 2 gelatin sheets in a bowl of cold water. Divide the cheesecake batter into 2 bowls. We'll start with the first layer. Add a few spoons of the cheesecake batter to a pan and melt the gelatin sheets in it. Then add it to the first bowl and mix well. Pour it over the cooled crust and place the baking mold in the fridge for at least 30 minutes.
Making the sugarfree strawberry layer
Meanwhile, add 400 grams of frozen strawberries to a saucepan. Cook the strawberries on low heat. Then let it simmer until the strawberries have become a sauce. Then add the Steviala syrup substitute with strawberry flavour. Next, soak 4 gelatin sheets in a bowl of cold water. Add the gelatin sheets to the strawberry layer and let them melt. Let this mixture cool slightly and pour it over the first cheesecake layer. Then place the baking mold in the fridge for at least 30 minutes.
Making the second sugarfree cheesecake layer
Next, repeat the steps of the first cheesecake layer with the second bowl of cheesecake batter. At last, pour it over the sugarfree strawberry layer and place the baking mold in the fridge for at least 2 hours.
Finally, finish the sugarfree Valentine strawberry cheesecake with the low carb crumble and enjoy!
