Making sugarfree lowcarb caramel magnums is quite easy and brings a lot of joy when it's time to indulge! Aside from magnum molds, you won't need many ingredients. I used 4 silicone magnum molds that you can buy at Bol.com or Happy-IJsklontjes.nl, as well as many other websites. Keep in mind two days for freezing the magnums, first for the magnums themselves and then for the sugarfree chocolate layer.

For the caramel flavor, I used Steviala Magical Maple, a syrup substitute without added sugars or sweeteners, and liquid stevia drops caramel. The original idea was to make a swirl magnum with Magical Maple, but when you freeze the magnums, the Magical Maple also turns white. However, in the end, it's the taste that matters, and you can definitely still taste it! If you take the sugarfree lowcarb caramel magnums out of the freezer a bit in advance, I personally find them even more delicious!

Ingredients

Sugarfree lowcarb caramel magnums

  • 250 ml heavy cream
  • 200 grams cream cheese
  • 15 grams Steviala Kristal Sweet or 10 grams Steviala 2 Sweet
  • 10 Steviala drops caramel or Steviala drops toffee-caramel
  • 4 tablespoons Steviala Magical Maple
  • 1/2 teaspoon vanilla extract

Sugarfree chocolate topping

  •  65 grams coconut oil or butter
  • 110 grams Steviala Dark Chocolate Melties


Baking supplies

  • 4 magnum molds
  • Mixing bowl
  • Spatula
  • Mixer
  • Small saucepan


Preparation

Making sugarfree lowcarb caramel magnums

Mix the ingredients well and beat the mixture until it thickens and peaks form. Divide the mixture into 4 silicone magnum molds and let them sit in the freezer overnight. The next day, melt the sugar-free chocolate with the coconut oil or cocoa butter using a double boiler. Dip the sugar-free magnums into the chocolate. The chocolate will harden immediately due to the temperature difference of the magnums. You can then place the magnums in a storage container and refreeze!

Tips for the chocolate topping

After dipping the sugarfree lowcarb caramel magnums in chocolate, you can also dip them in coconut flakes or finely chopped nuts. Experiment with different flavors of Steviala stevia drops.
