Erythritol is a natural sweetener, also known as a sugar alcohol or polyol. You can find it in small amounts in some fruits, mushrooms and fermented products. We produce this sweetener by using enzymes from fermented grains, sugar beets and sugar cane.
The crystallization process creates a useful product that resembles granulated sugar. The sweetening power is about 70% of sugar.
Erythritol has no effect on the blood sugar levels and contains almost no energy. Your body partially absorbs this sweetener in the small intestine and for the most part in the large intestine. The blood only absorbs 70% to 90% of this sweetener. Then, we excrete it through the urine. This also explains why this sweetener does not cause flatulence, bloating or diarrhea. This can be the case with other polyols if you consume too much of them. If you use more than 0.66 grams of erythritol per kilogram of body weight per day, possible intestinal complaints can occur. You have nothing to worry about when you are using a normal amount of erythritol.
As previously written, this sweetener naturally occurs in many fruits, like melons and pears. But it also occurs in mushrooms, for example. After the fermentation process of glucose, it is dried, filtered and purified.
